With an abundance of cucumbers in the garden this year, the pantry is all stocked with canned Dill Pickles, yet the cukes just keep showing up! We've been enjoying this delicious refrigerator pickle recipe that yields a much sweeter pickle, and can keep in the refrigerator for several months without having to process to seal the jar. They are super simple to make. Enjoy!
Maw Maw's Refrigerator Pickles
-about 6-7 cucumbers, sliced
-1 cup sliced onion (red or white)
-1 cup sliced green pepper
-1 1/2 cups cider vinegar
-1 cup water
-2 cups sugar
-1 Tbs. celery salt
-1 Tbs. pickling salt
Slice cucumbers, onions, and peppers. Mix in a bowl and pack tightly into large glass jar. Combine remaining ingredients and stir well with a fork. Pour over cucumber mixture. Refrigerate about 2-3 days before eating.
