This delicious sandwich filling is a favorite at our house...my kids gobble them up. They're so refreshing and easy to make! We like to eat them all year long...but they especially make a nice treat for a summer picnic. I usually make up the filling and place it in a container, and then make them on site. We have made these so many times to take to the field for a picnic when David is farming. We just asemble the filling at home, and the sandwich on site. They are delicious served on croissants or in pita bread.
I don't have an exact recipe, so here is a general idea of how I make them...
-2 cans chicken, drained (I use the Kirkland brand from Costco, but you could use any brand, or even fresh baked chicken breasts or rotisserie chicken)
-about 2 stalks of celery, finely diced
-about 1 cup of dill pickles, chopped (I use home canned...which adds the best flavor!!!)
-3 apples, peeled & chopped (I like Granny Smith apples)
-1 cup of peas
-3 green onions, sliced
Sauce:
-3/4 cup sour cream
-1/4 cup mayonaise
-3 Tbs. heavy cream
mix sauce ingredients together and season with garlic powder, seasoning salt, pepper, and a bit of dry Ranch powder.
Toss chopped veggies and chicken with sauce. Serve on croissants or pita bread. We also enjoy eating them on homemade rolls :)












I tried this and it was awesome. The combination sounds extremely odd but it was yummy!! Will definitely make again.

we make chicken salad sandwiches a lot at our house! love them! i sure miss those crossaints from costco though, mmm i love them. never made it with sour cream, i'll have to try your recipe!
