BLAH...winter is dragging on...and I am in the mood to take photos...but I am not in the mood to take more indoor photos. Wishing it was warmer outside. In the mean time, I wanted to share some photos from this past summer. My friend Jen at All Things Ribbon asked me to take some photos of my girls wearing dresses from her shop (and lucky me, she even gave me the dresses...my girls just love them!)
and even though that is just a glimpse of the photos (seriously...I took so many)...I think I'm finally finished with my Mexico posts!
I just realized that I never posted the rest of our Mexico vacation photos from our trip we took in December (I posted beach photos already, but not the rest of the trip)...and let me tell you, I am longing to be there basking in the sun right now...sigh...
This is our whole crew (the first photo even has Luis, our houseman, and Angela & Lily, our chefs...they were the most amazing people...we all miss them!!!). The second group photo is all of our crew in front of the house we stayed in...
on the first morning there, we went on a nice walk to exchange our money and check out the local sites...it was such a beautiful little community...

looking at this next photo makes me sad...our chefs (Angela and Lily) made the most delicious meals for us every day...fresh squeezed orange juice every morning for breakfast along with fresh fruit and tortillas/bean/eggs as long as other unique dishes each breakfast. lunch was usually fresh made quesadillas with homemade salsa and guacamole, and there was a special dinner every night which usually included freshly squeezed limeade to drink. YUMMMMMM...i'm hungry just thinking about it...I especially miss all the fresh fruit and juices....
The cooks and houseman have Sundays off, so on our second day there, we were on our own for dinner...here we are venturing out to eat at a Eva's restaurant (non of the restaurants ever compared to Lily and Angela's cooking)...
there is just something about the Fresca in Mexico...it tastes so much better than ours here in the US, and it is so refreshing. The kids were obsessed with Fresca...

and Lily...well, she was pouting, and she planted herself on a street corner and said she wasn't getting up...
this was the pool at our house...we could hardly keep the kids out of it. They would swim in the ocean all day, and then they would come straight home and swim in the pool until dinner, and then get back in after dinner...
One afternoon, the boys went deep sea fishing, and all of us girls headed into Puerto Vallarta...I didn't care for the city much at all...we preferred our smaller village of Bucerias...
Ok...there are still more photos to share, but I have a To Do list a mile long today...they will have to wait until tomorrow...
We took Grace to the Dillon Fiddle Contest again this year in Dillon, Montana. It was a fun day...even though we had to wake up and 4:30 am and drive 2 1/2 hours to the location...only to find out that Grace was running a horrible fever all day long. She toughed it out through three rounds and ended up getting third place. We are so proud of her...
It was so much fun to watch my niece and little sister too...as well as all the super talented kids from our area!
I saw a similar recipe on another blog, and it reminded me of this potato recipe I used to make. I haven't made it in a while, and I was happy to have it again! We eat a LOT of potatoes at our house (since my hubby is a potato farmer). Potatoes and eggs are a staple (we have 18 laying hens and own a potato farm...it's basically cheap food to feed our family), so I always like to have lots of ways to change up the way I cook them. I recently realized that I haven't posted recipes on my blog for a long time. It surprises me, because I love to cook, so i am going to try to better about posting them more often ;)
Seasoned Potato Cubes
-5-6 russet potatoes (you can also use reds)
-2 Tbs. canola oil
-2 Tbs. butter or margarine, melted
-1 dry pkg. ranch dressing mix
-1 tsp. garlic salt with parsley (Love the Lawry's Brand)
-1/4 tsp. seasoning salt
-1/4 tsp. pepper
-Parmesan Cheese
Preheat oven to 450 degrees. Place oil, butter and seasonings in a large plastic bag. Peel potatoes if desired, or clean skins well. Cut into small cubes and place in bag with seasonings. Toss well until evenly coated. Cover a large baking sheet with tin foil and spread potatoes across the pan. Sprinkle with parmesan cheese. Bake for about 30-35 minutes, stirring potatoes a few times during cooking.
